Potassium Metabisulphite, KMS, is used as an antioxidant and sanitizer.
Pure and high quality potassium metabisulfite; is an additive with multiple functions which is indispensable in wine making. It is capable of oxygen scavenging, reducing oxidation, kills unwanted micro flora, renders polyphenols more soluble and it acts as antioxidant agent against oxidasic enzymes.
To use as a sanitizer:
Dissolve 3 grams of KMS and 12 grams of Citric Acid in 1 gallon of water. The result will be 500 ppm concentration of sulfurous acid at 3.0 pH.
To use as an antioxidant:
1 oz. KMS results in about 30 ppm of free SO2 in 100 gallons must, juice or wine at 3.30 pH.
1 gram develops appox. 0.56 grams of SO2.
