Campden tablets are used to sanitize equipment and to add free SO2 to wine or must.
Dosage:
For Sanitizing: Dissolve 2 crushed tablets in 1 gallon water
For Adding to Must: Dissolve 1 crushed tablet per gallon of must and wait 12 hours before adding yeast
Each Campden Tablet contains .44 grams of sulphite and will bring a gallon of must to about 30 ppm free SO2.
