Citric Acid is used for sanitation, acidification and to give wines a fresher citrus note on the palate.
Dosage for Sanitizer: Dissolve 3 grams of Potassium Metabisulfite (KMS) and 12 grams of citric acid in 1 gal of water.
Results in 500 ppm concentration of sulfurous acid at about 3.0 pH.
